cucumber and peach salad — sounds weird, works well

Been doing this one on repeat for the past couple of weeks because it genuinely takes about eight minutes and the peaches are actually good right now. Which is rare. Basically: sliced cucumber, ripe peach cut into wedges, a handful of rocket, some red onion if you can be bothered to slice it thin enough (I usually can't), crumbled feta. Dressing is just olive oil, a bit of red wine vinegar, half a teaspoon of honey and a pinch of chilli flakes. That's it. I know peach in a salad sounds like something from a food blog that also sells retreats but to be fair it just... works. The sweetness against the vinegar and the cucumber keeps it from being cloying. I've had it as a main with some leftover grains thrown in and also just as a side and it's fine either way. The only thing I'd say is don't make it too far ahead — the cucumber goes a bit sad and the peach releases a lot of liquid. Make it, eat it, done.

I'd probably swap the honey for a bit of maple syrup just out of habit

peach is genuinely so good for skin too, all that vitamin C — more people should be eating it in savoury stuff
