nectarine and basil thing — wasn't sure about it, now obsessed
Been sitting on this one for a few days because honestly I wasn't sure if it was actually good or just good because I was hungry.
Right so — ripe nectarines, torn fresh basil, a handful of blueberries, thinly sliced red onion (less than you think), and crumbled ricotta. Dressing is just lemon juice, a tiny bit of honey, and a splash of good olive oil. That's it.
The trick is the red onion. Sounds wrong but it cuts through the sweetness and makes the whole thing feel like a proper dish rather than just fruit in a bowl.
Rough nutritional note: one portion comes in around 180–200 kcal, decent hit of vitamin C from the nectarines and blueberries, and the ricotta adds a bit of protein and calcium which helps it actually feel like food. Nutritionally speaking, pairing fruit with a small amount of fat and protein slows the sugar absorption — so you're not starving again twenty minutes later.
You can swap ricotta for goat's cheese if that's what you've got. Works just as well, slightly sharper flavour.
