pea and mint thing, honestly took 10 minutes
Had a bag of fresh peas in the fridge that were on their way out and basically threw this together before they went fully sad.
Cooked some pasta — whatever shape, I used the end of a fusilli bag — then just blitzed half the peas with a bit of mint, lemon zest, olive oil and a splash of the pasta water. Like a loose pesto but greener. Tossed the rest of the peas in whole so you get that texture thing going.
The lemon is doing a lot of work here tbh. Don't skip it.
I topped mine with some crumbled feta I had leftover from the watermelon thing last week and that was it. Proper nice for something that was basically a rescue mission.
