the butternut squash thing I've been making since it got cold
ok so it's not even a proper recipe, more like a thing I do when I get home from the shop and can't be bothered but also want something that feels like autumn in a bowl
basically I roast a whole butternut squash — halved, face down, bit of olive oil, like 40 minutes at 200 — then while that's doing its thing I make a really simple miso and ginger broth. just water, a spoon of white miso, grated ginger, tiny splash of soy. that's it honestly. scoop the squash out, blend it into the broth, it goes this insane deep orange colour. I've been adding a scoop of collagen in at the end, more because it dissolves invisibly than anything else, to be fair I can't say I notice a difference but it's become a habit.
then the topping situation is where it gets good actually. toasted pumpkin seeds, a dollop of crème fraîche, chilli flakes, and if I have it a few leaves of fresh sage fried quickly in butter. the sage goes this gorgeous translucent dark green and it smells unreal in the flat. my flatmates always come out of their rooms when I make this lol
the colour is just too much. like a proper burnt orange in a pale ceramic bowl. I took about thirty photos before eating it which is on brand for me tbh
