the chickpea thing I keep making on repeat

Right so I've made this basically every week for the last month and I'm not bored of it yet which is saying something because I get bored of everything. It's dead simple — a tin of chickpeas (drained, dried off a bit so they don't make everything soggy), cucumber, halved cherry tomatoes if you've got them, red onion sliced thin, loads of fresh parsley. The dressing is just olive oil, lemon juice, a tiny bit of cumin, salt. That's it. I sometimes throw in whatever else needs using — a leftover roasted pepper, some feta that's been sitting in the fridge, a handful of rocket that's going a bit sad. It absorbs it all. The chickpeas are the thing though. They actually keep you full for ages in a way that a lot of salads just... don't. I used to eat a salad at lunch and be raiding the biscuit tin by 3pm. This doesn't do that, at least not for me. Also scales up well if you're batch cooking. I make a big bowl Sunday, keep the dressing separate, and it's lunch sorted for two or three days. The chickpeas actually get better overnight once everything mingles a bit. Just give it a good toss before eating.

yeah it keeps well too, I sometimes make a big batch with roasted veg on the side and it does the whole week

yeah I add a pinch of smoked paprika to mine sometimes, makes them feel a bit less plain

the drying off step makes such a difference, soggy chickpeas ruin the whole thing
