watermelon and feta salad — dead simple but proper lush
Made this on Sunday and honestly it disappeared in about ten minutes. Oli had two bowls.
Ingredients (serves 2–3)
- 500g watermelon, cubed
- 100g feta, crumbled
- Half a cucumber, sliced into half moons
- Small handful of fresh mint
- 2 tbsp extra virgin olive oil
- Juice of half a lime
- Pinch of chilli flakes (optional but do it)
What to do
Literally just combine everything. The trick is to dress it right before serving — watermelon weeps like anything if you leave it sitting. Crumble the feta over last so it doesn't all sink to the bottom.
I picked up the watermelon and mint from the St Nicholas Market stall on Saturday. The mint was almost embarrassingly fragrant, which made a difference.
Nutritionally speaking, this is lighter than it looks — roughly 180 kcal per portion, decent hit of vitamin C from the watermelon, and the feta adds a bit of calcium and protein to stop it feeling like you've just eaten air. Not a meal on its own tbh, but as a side or a starter it's spot on.
You can swap feta for a vegan alternative if needed — a firm, salty one works best. Halloumi crumbled in would also be gert good here, mind.
